I started Volcano Wood-fired Pizza in November 2009.

Prior to launching I worked with my pizza guru Philip Denhardt at Saturday Pizza at the Cookery School in Shanagarry; Phillip helped me learn the skills necessary to create good pizza very generously sharing his extensive knowledge with me. Without him my pizzas would be ordinary.

A five minute pizza spinning lesson from Aussie Mark (the Crepe guy at Mahon and elsewhere) helped me speed up my operation 10 fold..... so respect and oodles of thanks to him too. (Mark worked for 5 years in a pizza restaurant in Sydney).

I love making good pizzas for my customers and would hate to think anyone was disatisfied and had not let me know so please do...be brutal! simon@volcano.ie
